Katherine was born August 21,1968 and passed away with family by her side on September 3, 2021.

Daughter of Allen Schaeffer and Patricia DiGiorgio (Schaeffer), Katherine was born in Alhambra, CA and moved to Mount Shasta in 1969 when her father began working for McCloud River Railroad.

Katherine grew up in Mount Shasta attending Mt. Shasta High School and College of the Siskiyous where she received an Associate of Science degree in Criminal Justice. She moved to Ashland, OR, and attended Southern Oregon University, earning a Bachelor of Science Degree in Criminal Justice.

Katherine moved to Santa Rosa, CA to manage a Safeway for a few years, later receiving a promotion and transferring to Roseville, Ca. She returned to college and earned a Bachelor of Science degree in Business Administration, a Master’s degree in Business Administration, and a second Master’s degree in Finance from California State University Sacramento. She graduated with honors.

After college, Katherine built her career becoming a residential, commercial, and agricultural property appraiser working on some of the largest property developments in the Sacramento region. She loved spending time with her family and her rescue dogs and had a passion for helping others, advocating for rescue animals, and working with families and small businesses teaching budgeting skills to those who needed guidance.

Katherine was a Fused Glass artist who sold her artwork throughout Southern Oregon. Her latest passion was collecting and selling antiques. Katherine chose the Rogue River Valley to live, where she owned, fixed up and sold several homes, her last in Grants Pass.

Katherine's life was cut short tragically and way too soon by Covid 19. She had so much more to accomplish, but sadly, it wasn't meant to be, and our Lord called her home on September 3, 2021.

Katherine is preceded in death by her Stepmother Linda Schaeffer. She is survived by her mother, Patricia DiGiorgio (Schaeffer), father, Allen Schaeffer, sister Kristine Schaeffer Fisher (Ron Fisher), nephews Kosai French, and Nicholas French, many aunts, uncles, and cousins.

Due to the Covid situation, her funeral was delayed. It has now been scheduled and will be held at St. Anthony's Catholic Church in Mt. Shasta on August 6th, beginning at 11:00 am. A luncheon reception will follow at the Parish Hall. A private family inurnment ceremony will follow at the Mt. Shasta Cemetery.
