This week, get a healthy and tasty recipe for steamed asparagus.

Picky Eater’s Asparagus

1 pound fresh asparagus, trimmed

¼ teaspoon Salt

¼ teaspoon pepper

1 clove garlic, minced

2 tablespoons butter

1 tablespoon balsamic vinegar

½ tablespoon oregano, fresh and chopped

½ tablespoon basil, fresh and chopped

  1. Trim ends from asparagus.  Place in a steamer basket for 2-3 minutes, or blanch in boiling water for 2-3 minutes.
  2. Melt butter in large non-stick skillet with salt and pepper. Stir in balsamic vinegar.  Add asparagus, chopped basil and oegano.
  3. Stir fry for 5-7 minutes, or until asparagus spears are tender.

Nutritional Analysis: 4 servings:  67 calories, 6g fat (4 g saturated fat), 16mg cholesterol, 193 mg sodium, 3g carbohydrate, 2g fiber, 1g protein. Diabetic Exchanges: ½ vegetable, 1 fat.
