Baked/Grilled Cabbage

1 cabbage head, quartered

1 onion, chopped

Fresh dill springs

1/3 cup vegetable broth

1 apple, peeled & chopped

1/3 cup white wine, optional

3 tablespoons chopped fresh parsley

1/4 cup shredded non-fat mozzarella

Put cabbage in casserole. Top with onion, apples, cheese and parsley. Put broth in bottom. Cover with foil and bake 350F until cabbage is tender. 

To grill, marinate the cabbage with the vegetable broth and white wine in a re-sealable plastic bag for 30 minutes.  Then make foil packets to hold the marinated cabbage, onion, dill springs, and apple.  Grill until tender, about 5-7 minutes.  Top with parsley and mozzarella just before serving. 

4 servings:  83 calories, 2g total fat, 1g saturated fat, 4 mg cholesterol, 2g fiber, 3g, protein, 179mg sodium, 75mg calcium.  Diabetic Exchanges:  ½ lean meat, ½ vegetable, ½ fruit.
