Easy recipe: Homemade Thousand Island Dressing
1 cup mayonnaise
1/4 cup ketchup
2 tablespoons white vinegar
1 tablespoon granulated sugar
1 tablespoon sweet pickle relish
2 teaspoons finely minced onions
1/4 teaspoon salt
dash of pepper
Combine all ingredients in a blender, and process till smooth. The goal is to have a pink smooth sauce. Pour the sauce into a bowl and chill covered in the refrigerator for at least 30 minutes. Makes 1 1/2 cups.
Tip of the Week: Preserve coffee beans’ freshness
Truly great coffee is all about preserving the natural oils that burst forth in brewing and provide most of the flavor. Pre-ground coffee quickly loses flavor as the oils evaporate in air. Grinding your own beans just before brewing offers the best.
Whole beans should be kept refrigerated in a tightly closed container. For long-term storage, freeze them. Oil in the beans can become rancid, spoiling their flavor.
