Dinner idea: Greek Meatballs
- 2 pounds ground beef
- 1 medium onion, minced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 cup soft white bread crumbs
- 2 eggs, whisked
- 2 cloves garlic, finely minced
- 2 teaspoons salt
- Dash black pepper
- 1/2 teaspoon dried oregano or mint
Mix all except butter and oil. Form into 1-inch balls. Heat oil and butter and brown on all sides. Cover and simmer for 20 minutes. Remove and add 2 tablespoons of lemon juice or red wine to the drippings. Stir and simmer 3 minutes. Pour over meatballs and serve as an appetizer or main course. Serves 6 or more.
