Dinner idea: Jalapeno Cheddar Hummus

  • 1 (15-ounce) can pinto beans, drained (save 2 tablespoons liquid)
  • 2 tablespoons jarred jalapenos, diced
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons sour cream
  • 1/4 cup fresh parsley, roughly chopped
  • 2 tablespoons diced red onion
  • 1/2 teaspoon cumin
  • Juice of 1/2 a lime
  • Salt and Pepper

Add all ingredients into a food processor. Pulse until creamy. Season with salt and pepper.
