Dinner idea: Sausage-Stuffed Sweet Potato 

  • 1 sweet potato
  • 1/2 cup cooked Italian sausage (1/2 Italian sausage link, crumbled)
  • 1/2 cup chopped broccoli
  • 1 tablespoon mined red onion
  • Couple of fresh mozzarella slices
  • Salt and Pepper

Preheat oven to 350 degrees. Poke holes in the sweet potato with a fork. Microwave on high in 1-minute intervals until soft. Combine broccoli, sausage, red onion and a dash of salt and pepper in a small bowl. Split open the sweet potato and partially scoop out insides. Mash into the sausage mixture. Stuff filling back into the potato and top with mozzarella. Bake for 15-20 minutes, or until cheese is melted and potato is warmed through.
