Food for Thought: Picnic safety

Staff Writer
Mount Shasta Herald

Picnics are a perfect way to enjoy getting together with friends and family this summer. Use these food-safety tips from Hellmann’s to make sure everyone has fun and no one gets ill.

- Cold perishable food should be kept in a cooler at 40 degrees or below until it's time to serve.

- Foods like cold salads or desserts in individual serving dishes can be placed directly on ice. Drain off water as ice melts, and replace ice frequently.

- Hot food should be kept hot, at or above 140 degrees.

- Wrap hot foods well, and place in an insulated container until serving.

- Once served, no food should sit out for longer than two hours –– one hour if the outdoor temperature is above 90 degrees. To be safe, throw away any food that has been left out longer.

Tip of the Week: Edible weeds?

Although weeds may be pesky plants in the garden, in the culinary world, they are making a comeback as edible wild greens. Plants like dandelion, lambsquarters and nettle are showing up in soups, casseroles and salads in gourmet restaurants. Tasty, low in calories and high in vitamins –– including disease-fighting phytochemicals –– find wild green at your local farmers market and add them to your menu at home.

Wise to the Word: mascarpone cheese

[mas-kar-POHN, mas-kahr-POH-nay] Hailing from Italy's Lombardy region, mascarpone is a buttery-rich double-cream to triple-cream cheese made from cow's milk. It's ivory-colored, soft and delicate, and it ranges in texture from that of a light clotted cream to that of room-temperature butter. It's versatile enough to be blended with other flavors and is sometimes sold sweetened with fruit.
