Pumpkin Strussel Bar

Not sure if this is a crisp or a bar- I was craving both and voila.

INGREDIENTS

½ lb pumpkin (1/2 small pumpkin)

1 c flour

1 c unsweetened coconut flakes

1 ½ c rolled oats or quick-cooking rolled oats

½ unsalted butter

½ sugar

3 TBS honey

DIRECTIONS

Scoop out pumpkin seeds and fiber. Slice pumpkin into long wedges and remove skin. Grate the pieces of pumpkin wedges. If you are pressed for time you can always use ½ lb canned pumpkin.

In small pan melt butter, honey and oats. Mix until combined.

In a large bowl, mix coconut, flour, pumpkin and oats.

Combine butter mixture with pumpkin mixture.

In an 8×8 baking pan, sprayed with non-stick spray, evenly spread the mixture.

Cook for 25 minutes or until lightly brown. Allow to cool and then cut into squares.

Makes 12 bars.

Crisp Topping-

1 ½ TBS butter

2 TBS brown sugar

2 TBS oats

2 TBS flour

½ tsp cinnamon

Directions:

In a small bowl combine butter, brown sugar, oats, flour and cinnamon. Work all the ingredients with your fingers until it resembles coarse meal. Heat a small frying pan on med-high and cook/fry the crisp topping mixture until it so a darkened golden brown (approx. 3 min). Remove from heat and set aside.
