Sweet + Spicy Tomato Onion Jam

2 medium onions peeled and sliced

1 tbsp olive oil

11/2 lbs tomatoes- core, peel, seed and chop. Roma are best, but use what looks good.

½ cup light brown sugar

2 tbsp apple cider vinegar

1 tsp salt

½ tsp red chili pepper flakes

While caramelizing onions in oil you can blanch tomatoes for easy peeling. Link to my recipe for Caramelized Onions. Drop tomatoes in boiling water for a few seconds and plunge into ice water. The skins come right off. When the onions are caramelized add the onions, sugar, salt, vinegar and pepper flakes. Continue cooking on simmer until the mixture thickens to a rich consistency about 1 to 1/12 depending how juicy your tomatoes are.

Store in refrigerator

It's an easy process to remove the skins from tomatoes. Use a slotted spoon to transfer tomatoes from boiling water to ice bath.

To peel tomatoes easily- drop into boiling water for 5 seconds then plunge into ice water. The skin slides right off.

Plunge the tomatoes is ice water to stop the cooing process.
